Breakfast for Dinner!

My family loves breakfast for dinner. It's the best comfort food! This recipe is at the top of our list, and you can customize it a thousand different ways.

Sweet Potato (and Everything else) Hash

INGREDIENTS

  • 2 tbsp. avocado oil or coconut oil, (or reserved bacon grease!)

  • 2 large sweet potatoes, diced small

  • ½ cup onions, diced

  • 1 can black beans, drained and rinsed

  • 2 garlic cloves, minced

  • 1 cup mushrooms, diced

  • 2 cups spinach or kale, chopped

  • 6 strips uncured bacon

  • ¼ tsp. Himalayan pink salt

  • ¼ tsp. black pepper

  • 2-3 eggs (optional)

other options: diced bell pepper, diced tomatoes, jalapenos, salsa, avocado slices or guacamole

INSTRUCTIONS

  1. Cook your bacon the way you like it. Chop cooked bacon and aside. Retain bacon grease if using.

  2. Preheat oven to 400 degrees.

  3. Heat 1 Tbsp. cooking fat in large oven-safe sauté pan on medium heat.

  4. Add sweet potatoes and sauté for about 15 min or until cooked through. Cooking time will depend on size of sweet potato cubes.

  5. Add remaining Tbsp. of cooking fat, onions, garlic, and mushrooms, and sauté for about 5 minutes.

  6. Add spinach or kale, bacon, beans, salt and pepper and sauté until greens are wilted.

  7. Use a spoon to create little wells in the hash and crack the egg directly into the wells. Place pan in the oven to cook for 6-8 minutes, for a white top and runny yolk.
